Cantaloupe and Chicken Salad

I'm having pretty good luck with new recipes lately. I'm giving this one two thumbs up. Ryan was so-so and the kids of course wouldn't even try it.
I'm talking about a new summery dish I found called Cantaloupe and Chicken Salad.
Super easy to make... cantaloupe, grapes, cucumber and cooked cubed chicken all mixed up with a dressing of mayonnaise, yogurt, lemon juice and chives.

I'm usually not a fan of things "all mixed up together". I like lots of different foods; just keep em' separated! But the more I ate of this, the more it grew on me. I really liked the chicken with the dressing on it, and the fruit kept it light and crunchy. Ryan said it wasn't his favorite.

The kids, by the way, ended up eating their dinner "pre-assembled" :

I was wondering if there is anything special in the BLT wraps. It sounds good. Are you just using mayo with it or something else? I've been glancing at your blog for a couple of months now. I found it through looking at some other blogs of people I went to college with (I went to Greenville). I really struggle with meals because my daughter is allergic to all dairy, nuts and eggs. I am always looking for new ideas and recipes. Thanks! Michelle Witt

I have done BLT wraps in the past that were more like a salad with bacon, tossed with I don't remember which Kraft salad dressing wrapped in the tortillas. I want to say a peppercorn dressing? This time I actually bought some vegetable cream cheese to spread on the tortilla. But I never used it because when it came down to it, I was just in the more traditional mood and stuck with mayo on toast!
Anyway, I know none of that helps with your daughters allergies... I know how frustrating that can be!! Sawyer is also allergic to dairy, nuts, eggs, citrus and soy. I many times just make him an alternate version of our meals, oftentimes simply just leaving thing unmixed, or un-"dressed". He's super picky as well, so it is always a challenge!! If you have any good ideas or recipes be sure and pass them my way as well!

Did you see my banana cookie recipe below?... it's egg and dairy free and Sawyer loves them. It's a nice healthy snack!

Wow! It sounds like your little guy may even be a bit more difficult than my daughter to feed. I'm not sure how you do it without having soy. I have several recipes and resources I can pass your way, but some of them may have soy ingredients. Let me know where you want them sent.
